There’s never been a better time to shop local, and the farm-to-table food movement is a great way to do this. Getting food from local farmers supports our local economy, and gets you fresh food that’s always in-season. Couples want a great culinary experience for their guests, and serving farm-to-table food for your wedding is a great way to do that.
As Andrew Garner, Executive Chef at Apples 2 Apples Catering explains, the rise in sophistication of couples getting married definitely includes their culinary choices. “People are way more interested in food overall. Most couples don’t want the usual chicken, fish or beef options anymore. They prefer their vegetables and starches to be prepared in new creative ways, and they are trying vegetables that they may not have had before. For example, some couples are simply not used to rutabaga and turnips, yet those have become some of our most popular starches.”
BENEFITS OF FARM-TO-TABLE FOOD
Chef Garner explains more about this enduring food trend, “Not only is it a current wedding trend — it will be a long-lasting trend. People want to know where their food has come from. We use two local farms: Footjoy Farms and Dargsmith Farms. I want the fewest hands to have touched my food and the farm to table concept does that. That also means it is that much fresher. The less time vegetables are off the stem, the sweeter and more flavorful they are.”
LOCAL FAVORITES
“We are in Minnesota so corn is the KING. We have an amazing sweet corn succotash, and we sell an abundance of it from the end of July through September,” says Chef Garner. And while great seasonal food is always popular, “mid to late summer is always the busiest for Apples 2 Apples Catering. You can get an amazing variety of fresh produce in those months!” says Chef Garner.
